Vegetarian recipes???

Does anyone have any good vegetarian recipes? Simple but tasty recipes! Has anyone used a recipe with soya cheese? I am looking for new ideas on fixing vegetarian meals. Thanks.

Vegetarian or Vegan?

All I make is vegetarian food (hubster is a vegetarian), so if that's what your looking for (and not vegan) I can help!

Soya mince = excellent beef substitute

- Lasanga
- Chili
- bolognese
- Shepards pie/Cottage pie ( I make my own versions of this which I call Bungalow pie and Vatican pie)
- Pie & Mash
- Philly cheese "steak" subs/wraps
 

Quorn = replaces chicken
-  regular Escalopes
- "Chicken" fajitas
- "Chicken" parmigiana
- BBQ "Chicken" wraps
- Spicy lemon lime "Chicken"
- "Chicken" Kotletki with sour cream sauce
- "Chicken" Chicken Cordon Bleu (with quorn ham and vegetarian swiss)
- "Chicken" (marinated in white wine sauce with fresh peppers and asparagus)
- "Chicken" Quesadillas
- Chicken"  Teriyaki
- Caeser Chicken"  wraps

Other substitutes:

- "Sausage" & Mash
-  NY System Hot Wieners
-  Pasta & Sauce w/ "Sausage" & "Meatballs"
- Veggie burgers


Non-substitute food:

-Baked Mac & Cheese
- Mushroom Dhansak,  Taka Dhal, many curries really.
- Onion Bhajis
- Curry Pizza
- Pizza (normal)
- English muffin pizzas (oven top muffins)
- Boiled Dinner
- Udon Soup
- Sushi (Omlette, cucumber, red pepper, many kinds)
- Stir Fry
- Lo Mein
- Broccoli Casserole (a mazillion other casseroles)
- Roast veg
- Vegetable Tempura
- Stuffed Yorkshire puddings
- Sweet & Sour mushroom rice (with pineapples and Maraschino cherries)


That's just some things off the top of my head...im really hungry now. ><

Tonight i'm planing on coming up with some way to use the sun dried tomatoes I bought. =p

The Moosewood cookbooks are good, as is Madhur Jaffrey's World Vegetarian. Rose Elliot does vegan stuff as well.

I second the Moosewood books, but the absolute best vegetarian cookbook I've used is this one:


It's US based, but I found a lot of use for it here in the UK.

I made these the other night, but used Quorn mince. It was SOOO good. Reminded me of being like six years old in the US.

Just over the weekend, I made a SERIOUSLY delicious vegetarian shepard's pie (and its vegan if you leave the cheese off the top of it!).

Here we go:

For the mash:

3 sweet potatoes, peeled and cubed
half a butternut squash, peeled and cubed (used the other half the night before in a risotto, delish)
just a small bit of soy milk (like 1/4 cup or slightly less).

For the rest:

We used a brand of soy mince from the shop 'As Nature Intended', I'm sorry I can't remember the brand! Used 200 grams of a 300 grams package (used the rest the following night for an awesome spaghetti dish).

Onion
Half a cup of red wine
thyme
olive oil
half a cup of vegetable stock
handful of fresh green beans, chopped
2 carrots, chopped
2 bay leafs
bread crumbs
cheese (obviously optional)


Cook the onion in some olive oil for 5 minutes, add the carrots, cook for another 5 minutes. Add red wine, let it reduce for a couple minutes. Add thyme and bay leafs, as well as the stock and green beans. Also add the mince. Let simmer for up to 10 minutes.

For the mash - boil cubes of squash and potatoes for up to 20 minutes. Drain, add just a little bit of soy milk (or just milk), and mash together.

Add the filling to an oven safe dish, then add the mash on top! Sprinkle with bread crumbs and cheese, then bake in the oven on 350 (or 200 on these crazy ovens over here) for 20 minutes. Its awesome! You could put whatever vegetables you want in it, but the main parts of sweet potatoes, butternut squash, and red wine made it seriously awesome!

My boyfriend and I intended to to make it for one night, and eat the rest the next night. Of course we ate the whole thing  :o
