Well after seeing this thread, I had a SERIOUS hankerin' to make some cornbread, especially as the 4th of July is coming up, and I want to bring as many home made American goodies as possible to the small party I'm going to (I'm also bringing a small camping burner and will be making smores for everyone, yum).
I went out and bought some polenta, and have tried a couple recipes. However, I'm just not getting it right. Does anyone have any recipes for cornbread they really love? I know some people like it a bit more sweet and cake like, but I prefer it a bit more savory. Here's the recipes I've tried (I try to make things as vegan as possible, which i KNOW, might not work for American baking guilty pleasures) -

So I tried again today, but this time added half a cup of corn (i like having actual corn in it). It tastes better, but STILL. I'm just missing something! I just don't know what!
Any suggestions? Do I need to just suck it up and use all dairy?
