Ive used this a few times with many happy tasters to back me up:

http://www.cooks.com/rec/doc/0,226,152180-227201,00.html

NEVER FAIL CHOCOLATE CAKE
2 eggs
3/4 cup cocoa
1 cup vegetable oil
2 cups all purpose flour
2 tsp. vanilla
2 tsp. baking soda
2 cups sugar
1 cup hot water
1 cup milk plus 2 tsp. vinegar (or just use buttermilk)
1/2 tsp. salt

Combine all ingredients in a bowl. Transfer batter to a greased 8 or 9-inch square pan.

Bake in a preheated 350°F oven until a toothpick inserted in center of cake comes out clean (about 45-50 minutes).

This is my go-to chocolate cake and cupcake recipe. I've made it hundreds of times and I love it because all the ingredients are stuff I've got just lying around, you can mix it easily by hand so there's little washing up, and there's no faffing about with melting chocolate over a water bath or stuff like that.

I like to pair this with Bailey's icing, too (just melt some butter, mix with a shot of Bailey's, and add icing sugar til it's the right consistency).  :P

Thanks!

I don't know what my husband is going to do when I find a job.  He won't have meals when he walks in the door and and a pudding to follow every day!

I found this recipe about a month ago and it is so good and so easy to make.  You can mix it all in one bowl, you can definitely taste the red wine in it, but the marscapone topping really balances it out.  My husband who is not a big fan of red wine loves this cake. http://smittenkitchen.com/2011/09/red-wine-chocolate-cake/?utm_source=feedburner&utm_medium=feed&utm_campaign=Feed%3A+smittenkitchen+%28smitten+kitchen%29
