I've read that the lemon juice actually brings out the sweetness of the apples.  I made applesauce loads last year--time to make it again!  Also, I've found it doesn't need any sugar at all to be honest--better for you that way, too and still plenty sweet.  I like to use all different types of apples in one batch.

These came from my FIL's garden and were very tart (like, tarter than Grannysmiths), so the sugar was probably necessary (the resulting applesauce I made is actually very tart even with the sugar!  :o) But I would think with lots of other varieties of apples, you wouldn't need any sugar at all. If I make some with another sweeter variety, I will try it without and see how I like it.  :)

I've been making a lot of apple butter this autumn. It's so good! Basically, you make applesauce (no sugar), and then add the sugar and cook it right down until it's dark brown and spreadable.

Oh yum! I love apple butter. I may try that with the next batch FIL gives us.  :)

Today, I'm making pumpkin puree and pumpkin butter. Scrumptious!  :)

I used this recipe and it was reeeeeeally easy. The resulting cheese is kinda like ricotta or quesco fresco. We had it on tacos last night (with homemade guac, too) and it was very, very good.

I might try that, I make my own paneer all the time. SO much nicer than buying it.

If I knew how to make cheese, it'd be very dangerous for me indeed.  ;D

Same with chocolate.   :D My sister and I used to make our own cider and that was pretty bad for us, as well!  :P

Honey to taste

I also added Paprika and Black Pepper.
