Easy Christmas cookie/treat recipes?
« on: December 08, 2012, 11:41:14 AM »
I used to bake a lot when I was younger, but got out of the habit. My kitchen workspace is much smaller now and my tools limited. Does anyone have any easy Christmas cookie recipes? or Christmas treats in general?  I'm going to make the Christmas Bark someone suggested on another threat if I can find the candy canes.

Just looking for simple things that I can make without too much fuss, or too many exotic ingredients that would be hard to find here. Thanks. D

I don't know if you consider these Christmas treats or not, but I made them for Thanksgiving and they were super easy and really tasty! I'm not a very good baker so for them to come out as good as they did, you have to know they were easy.

These are really quick and easy-- and now that kisses, pretzels and m and ms are more available in the UK they are an option again :)

These are basic peanut butter cookies, but turned into reindeer with pretzels and M&Ms: http://buddingbaketress.blogspot.co.uk/2010/12/peanut-butter-reindeer-cookies.html

I had to vary mine slightly as I couldn't find the mini choc-covered pretzels she used, but mine still turned out great and the co-workers were highly amused.

Something else you should consider with limited space is a cookie press. My sister got me a combined cookie press/icing gun for my birthday a few months ago and it's brilliant. The recipes are fairly simple for the cookie press, and once the dough is ready it only takes a few minutes to get them on the tray to bake. Here's the press I have if you're interested:

You can get mini-chocolate covered pretzels around Christmas.  M&S had them last year, but I haven't looked this year.

I make about 50 dozen a year. I really like cookies.  I was traumatised my first year here with no cookies.

1. Chocolate Chip (6 dozen)
2. Molasses (6 dozen)
3. Cut-outs (6 dozen depending on cutter size)
4. Eggnog spritz with a cookie press (4 dozen)
5. Cream cheese spritz (4 dozen)
6. Peanut butter (2 dozen)
7. Random attempts at new types to see if they are any good. This year I am trying some dark chocolate and spice cookies.  We'll see.
8. Kiffles (but they never turn out) Anyone have a good kiffle recipe?

The only ones that would be a pain in butt in a small house are the kiffles and the cut outs.  The other are all drop cookies.

Thank you all for these recipes and ideas! I will be checking them out in detail over the next couple days and deciding what to bake this weekend! :D
