Goose eggs

My husband volunteers at a community farm at weekends, and sometimes he is given goodies to take home.  This week, it's goose eggs.  They are huge--about the size of a baseball, though egg-shaped, obviously.  What can I do with them?  I'm a bit squeamish about eggs, and will only eat them if they're really well cooked.  Can I scramble them or make an omelet?  Has anyone had a goose egg before?

The idea to make homemade pasta seems like a good suggestion if you will be weirded out with them scrambled or fried.

I'd probably do a baked omelette with cheese, tomatoes, bacon, potatoes, and anything else I found in the fridge.

The best Victoria Sponge I ever made was with Duck Eggs. Follow the recipe where you weigh the eggs and use the same amount of sugar, butter, flour etc. Hugh Fearnley Whittingstall has info about that on the web somewhere.

You can also soft boil them, fry them. I like them a lot!

Goose eggs aren't really used that much as they're not richer like duck eggs, and they're lighter in flavour than chicken eggs.

Saying that, you could make a good flavoured (vanilla) custard or ice cream with them.
Alternatively, mayonnaise?
