I know this is a dumb question, but...

I'm applying for a spouse visa to join my British husband in the uk. It'll only be for about 2 years, after which we are relocating permanently to the US.

Aside from the visa, is there anything else "official" or legal I should be doing here? Do I have to do anything with social security or my drivers license or anything? I'm not giving up citizenship and I won't be gone that long but I've no idea what loose ends I need to tie up before moving. I feel like I haven't even gotten a grip on being an adult in the us yet and now I'm moving overseas!

You don't have to notify social security.

Depending on your state, you may need to notify the DMV. Some states require that you notify them of any change of address within 30 days of a move, and it's a criminal offense (although minor) if you don't do this. A few states don't care.

There is a form to notify the IRS of a change of address, but most folks just seem to wait until the next tax filing and show the new address with a "check" in the box stating that your address has changed.

Plans have a way of changing - but in the interim, just make sure you don't run foul of requirements to file US income tax and state income tax, plus FBAR if applicable.

You will be able to drive on your US license here for 12 months, BUT you may find local insurance companies reluctant to insure you. Take some driving lessons and get your Manx license as soon as you can. I know you might be thinking driving lessons?? Believe me I had to take quite a few in order to get out of the habit of bad habits…cause it will get you failed! I had to take the driving test twice….

I agree regarding driving lessons. The objective is to teach you to pass the UK test, so money well spent.

And...reduced insurance premiums are definitely another reason to get a UK license as soon as possible.

There really is no need to get your license on the IOM unless you are desperate to drive.  They have great public transportation and walking the island will get you closer to the beauty of it.  I lived there for 2.5 years, drove a little but really didn't mind not driving most of the time. Of course, it all depends on where you live.
