I'm currently visiting the UK.  Can I go to Europe for a short visit on my American Passport and return to the UK without a problem?

This shouldn't be an issue. Travel to/from europe from the UK is much more relaxed than from elsewhere in the world.
How are you planning on getting to europe and are you just visiting one country?
Once you are on mainland europe you won't find any border checks between most of the countries. If you are flying it won't be an issue as you will have a return flight back to the UK. If you are crossing the channel, especially if it's in a British car just make sure the French customs stamp your passport on arrival as they have a habit of just letting people in. This way UK border control can tell how long you've been in europe on your return. (Plus no stamp to show to your friends either)
There is nothing to worry about other than filling in you landing cards again, if you get given one.

Have a great time!

Yes, you can travel but you will be applying for another visitors visa at the border, so you technically are not guaranteed to be let back in.

How long is your total stay in the UK?  The general rule is that you cannot spend more than 6 months out of 12 in the UK.  If you are approaching that mark, you might find it difficult to reenter.  It will be in your best interest to have a copy of your return flight back to the US to show you have no intention of overstaying.

If you are here on a short visit (a couple of weeks) it's highly unlikely you will have any problems.

Along the lines of this, I suggest you bring proof of your return to the US (confirmed flight itinerary).
