I grew up on menudo and "tacos de tripa" (deep-fried tripe tacos with guacamole and red chile sauce). There's a place a few miles from me here in my Houston suburb and my English Hubster and my kids simply refuse to go with me to this taco joint because of their fear of tripe. Now I know I could go to Prague or Hillman's in Hampshire when we move back I feel a road trip coming on! Lol
I thought that tripe was really popular up North because people worked in textile mills and tripe wetted and soothed their throats.  True to form,  I think they ate it cold and slimy after it had been boiled for hours.   Still, I don't think you have to drive to Prague.

Your description of tripe tacos really got my mouth watering.
