One last question (for today at least!):

Appendix 2: Part 2: Accommodation
We will be renting when we first get to the UK but don't know where that will be yet so for the purposes of the visa application, we will be using my in-laws' home as the place we plan to live.  They own the home and there is no issue with overcrowding.  They will provide a letter for us but is there anything else they need to provide?  Should the letter also state that they will not be charging us rent or that we are not responsible for any housing costs or utilities?

Just needs to state that you can live there for as long as you need and a description of the property.  You'll also want to include their Land Registry that shows they own the property and are able to give permission for you to stay.  It's a good idea to include either a mortgage statement or a copy of the deed, if they are able and willing but not required.
