So I have one to share. As a southerner, I use sweet pickle relish a lot. Use it in tuna salad, potato salad, macaroni salad, on top of hot dogs, etc. was distressed when I could only find it on Amazon and very expensive for a condiment I used so often, so I started making it myself and it's easy.
One English cucumber, one small onion, one red pepper, cut into chunks. Put into food processor and pulse until chopped up, but still identifiable. Mix in 1/2 teaspoon of salt and place in fine coloander to let liquid drain, squeezing out as much liquid as possible.
In saucepan, put 1/2 cup white vinegar, 1/2 cup sugar, 1 teaspoon mustard seed, 1/2 teaspoon celery salt, 1/2 teaspoon dill weed. Bring to boil, then add cucumber mixture and stir in. Turn heat down to simmer and allow to cook down until thick. Pour into jars. This makes about 2 1/2 small jars of relish. It's really good.
