So with the emails and call logs that I do have .. do I
 Emails: show the content of the emails or blurr it out somehow

And the calls :
  Do I show his number or. Just a screen shot with his name only ..

For the emails, you just want to take screenshots of your inbox showing a list of emails you've received from each other. So, just a list of date, sender and subject line.

For example:

From                Date           Subject
Your fiance       03/01/17     Hey...
Your fiance       03/15/17     Re: Hey...
Your fiance       04/02/17     Re: Hey...
Your fiance       04/18/17     Re: Hey...

Facebook Messenger is the primary source of communication between my wife and I. Well over 95% of our chat and video time is via it. One thing to be aware of is the ability to get historical information out of it. You can get Google Chrome addons (I forget the name of the one I used) to download an entire chat history but the data display is simple and not the style as you would see it in Messenger.

In Messenger, you used to be able to go back to any time period, but when I was getting screenshots back in July, I discovered that they restricted searches to the start of 2016. Scrolling back, one day at a time from that period, in the likes of Firefox is super slow. In the end I had to rely on the export from the Google Chrome addon.

Oh no that sounds scary ... I wonder why they don't really like Facebook .. I understand people fake it but for a long distance couple it's a great tool for communication/pictures/etc .
   So how stricked are they for Facebook ?
    I've been taking screen shots and such but yes it's taking forever to get back to 2015 to be honest I don't have much from 2015 other then some flights we have taken to see each other and a picture of us at the rugby World Cup where we are infront of a sign that says 2015 rugby World Cup England .. we have the tickets of the match we met at in October .. I'm just trying to think what else we can do ... I have posted pictures on Facebook with the dates of people commenting as well with the dates next to it ..  but I'm kinda at a loss here .. but 2016/2017 we are well stocked with information
 It's only that 2015 from Oct to Dec any tips ?

In what way? If Facebook is all you have, then send it. They will consider it as part of your relationship evidence.

It's really just a suggestion that if you can show enough regular communication without including Facebook, that's preferable because other types of communication may hold more weight, but they aren't going to refuse the visa if you include stuff from Facebook... unless they have reason to believe the relationship isn't genuine.

I'd either try to access it using the Chrome Addon suggestion above, or just make a note in a cover letter that you are unable to retrieve the messages from Oct-Dec 2015.

It's only a 2-3 month period from 2 years ago, so as long as the rest of your evidence is strong and covers the 2 years since, you should be fine.

What they need to make sure is that it's not either a forced marriage or a convenience marriage to qualify for a visa... if you had only met once and hadn't had any communication at all in the last 2 years, it would look suspicious, but as long as you can show you have been communicating and visiting each other, you'll be good.

Ahh ok I dunno why I was just getting nervous about the 2015 . If I would have known about the visa I would have saved everything !  We have so much evidence from 2016 to present day , tons of flights phone calls over iPhone FaceTime , pictures from our travels together wedding photos etc .. I deff do not want to over send so I'm trying to put it all in order ..  another question as well .. we are going by what he makes in the Uk well over the amount needed we also have a savings over 20,000 pounds .. put away that's been in his account now for over a year .. does that also help ..
