Do you cover the entire year with the financial evidence? You DO need to show the last deposit into the bank account. Go into the branch and have them print a partial statement for you or print it yourself and have them stamp it.
OK we have this now. They didn't stamp it but it has a little timestamped mark that says it was printed at the branch, hopefully that will do?
You are missing and do need the employers letter which gives details of the employment.
That info is included in the letters confirming the authenticity of the pay slips so I think that should be fine.
What are the months (as opposed to the range) for the correspondence?
Why, are they timing it to the minute now? Anyway:

You do need the proof of ownership for your accommodation evidence. I don't know what the shared ownership scheme is but you need evidence that you are permitted to live in the property so if someone else owns some of it, you will need permission from them too.
We have a mortgage statement and a copy of the deed, will that do?
Include the P60's
Apparently we don't have this since the (few days) gap between my husband's last job and his current job was over 6th April. We have the P45 from his previous job and both employment contracts.
