You need to explain literally the reason you can't provide the documentation asked for. Here is the excerpt from the old paper form, the requirements are the same.

Note 11 The items of correspondence should be addressed to you jointly or in both your names. Examples of acceptable items are listed below.
The dates of the items of correspondence should be spread evenly over the whole period you are relying on. They should be from at least 3 different sources. If you do not have enough items in your joint names, you may also provide items addressed to each of you individually if they show the same address for both of you.
For example - 4 items of correspondence in joint names to the same address and 2 items addressed to each partner at the address. In total 8 items would need to be submitted.
If you and your partner have no bills or correspondence in joint names, you will need to submit 12 items (6 each) of correspondence, evidencing that you reside together at the same address.
If you and your partner lived with relatives or friends for some or all of the period you are relying on, please provide a letter from the relative(s) and/or friend(s) confirming this.
If you did not live together for any part of the period you are relying on, tell us the reasons for this and whether you stayed in contact with each other during this time, and provide any relevant supporting evidence.
Please give an explanation on a separate sheet if you cannot provide 6 items; if the items are not addressed to both of you; or if they do not cover the period you are relying on.

Thank you, I will look over everything we have and triple check any supporting documents that can be used.

We have submitted our online application, and cannot seem to find any available appointments for any centre nearby to us (or family across the country) at the moment. What do we do in this situation? Is this a case of just waiting it out and seeing when and where we can go for our biometrics appointment?

There are no available appointments because you're not currently allowed to book one due to Covid. Everyone who has applied in the last couple of months is in the same boat right now.

Only those people who were able to book an appointment before the centres closed in March and subsequently had their appointments cancelled are currently allowed to book and attend appointments.

They will open appointment bookings to everyone else at a later date. So, all you can do is wait and keep checking the UVKCAS website to see when you can book an appointment.

Would this mean that they are extending the visa (residence permit) expirations and biometrics appointment deadlines?

No. There are no biometrics appointment deadlines, and as long as you have submitted your online application, it doesn't matter if your visa expires while you are waiting for your appointment.

The ONLY date that matters is the date you submit your online application, because that is your official application date... as long as it is submitted before your visa expires, your immigration status will be automatically extended under 3C Leave while you are waiting to book an appointment and while your visa is processing (https://www.gov.uk/government/publications/3c-and-3d-leave)

Many people here on the forum are still waiting for biometrics appointments even though their visas expired months ago.

Totally understand. Guess it's a good time to make sure we have our documents!

The checklist that I printed from the website has a few items on it that I would love some clarification on

1. Evidence of council tax costs for the accommodation in the UK where you live or will live.
2. Evidence of monthly housing costs for the accommodation in the UK where you live or will live.

Not sure what they want for the first, and is that just tenancy agreement for the second? Thank you.

For the first, I can answer that they're looking for a copy of your most recent council tax bill. For the second, I think a mortgage statement or something else that might indicate how much is going out for rent or so. If that's in your tenancy agreement, I think that should suffice! :)

- council tax bill (for first)

If you own, they want:
- mortgage statement
- council tax bill

It should be your most recent annual bill, issued in March 2020.
