So I am looking to apply for my fiancee visa this weekend, unless you kind people find an issue with my documents below or some other issue, then I will fix it. I am trying to apply ASAP, as my local ASC opens July 20th. I am seeking entry to the UK October 2020.
My fiance is going to take the supporting documents to a VFS visa application center near him in the UK to have the documents scanned.
We’ve also completed Home Office forms Appendix 2 and SU07, just in case as we read conflicting info on if we needed it or not. Form SU07 requires proof of address for my fiance/sponsor, so he has included a copy of his council tax bill, as well as a utility bill.
Applicant DocumentsMy passport which will be turned in at my biometric appointment and I will print out receipt for proof of payment for application and the page I need to bring so the people at my biometric appointment can stamp it.
My fiance has scans of my entire passport (as I think this is needed?).
I am American and have an American passport so I don’t need to show an English language requirement but do have a BS and MS from American universities. Do I include a copy of my degrees?

Sponsor DocumentsLetter from letting agent that gives the size of my fiance's rented flat (number of bedrooms, other rooms), allows me to live there and how long my fiance has lived there. Letter was emailed and then printed.
Sponsor's supporting letter that outlines how we met, how he meets the financial requirements, shows adequate accommodation for me/us, and promises to support me. Also has our wedding plans.

Financial ProofLetter from fiance’s employer confirming the following: start date, job title, confirming job is full-time and permanent, confirming salary, confirmation of national insurance number, and confirms that the e-pay slips are genuine.

Previous 7 months bank statements. Not copies, the actual ones he gets in the post/mail.

Proof of RelationshipScreenshots from Skype, taken every few weeks, from 2018 to current. This shows regular conversation/contact. We met in 2018.
Pictures from our 5 trips we have taken to see one another and the dates of those trips.
Scans of our airline tickets where we have those tickets still, otherwise copies of our emailed itinerary info for those flights
Proof of intention to marryEmail chain with local registry office inquiring about availability of dates for wedding, includes inquiring about dates in December 2020.

Photos of us for the proof of relationship part have 2 pictures of our engagement as well, as in him on one knee proposing to me and us showing our rings.
Additionally:1. The visa application asked, among other things, if I had any unpaid debts, bankruptcy, etc. I answered yes I had filed for bankruptcy in 2008 but the debts were discharged. Is that a sufficient response? I am unsure the exact dates of this but it was 2008 and I think it was January. Hope that is alright too (the guess of dates).
2. The dates of employment letter, bank statements, payslips, and the letting agent letter all need to be within 28 days of application submission date, correct? Not biometrics date and not document date? Hoping I can get a biometrics date ASAP but will have to see post-COVID what things look like.
3. If approved/when approved, I get 6 months to enter the UK, right? Not 30 days like on a spouse visa? This is not to dilly dally or anything but to ensure I can get my cat on a flight and I prefer more than a 30 day window to do that. Again, I am unsure what's going on with flights and all this so just want a larger window to plan in. I know I need to be in the UK fairly quickly though to give notice to marry, marry, and then apply for my spouse visa.
