Okay, you don't have enough payslips and bank statements to meet the requirement.
If your most recent payslip is November 30th, then the 6 months you MUST cover are May 27th to November 27th... and every single day must be covered explicitly, including the days of May 27th, 28th, 29th, 30th and 31st.
So, that means you also need the May payslip and bank statement, in order to cover every day of the 6 months.
In fact, depending on what date the May payslip was issued, you may also need the April payslip and bank statement as well. For example, if the May payslip is dated May 28th, 29th, 30th or 31st, you will be either 1, 2, 3 or 4 days short of meeting the financial requirement, which will mean a visa refusal, unless you also include the April payslip and bank statement.
If the payslips are electronic, then you will also need an updated letter confirming the authenticity of the May (and possibly also April) payslip, along with all the other payslips.

•Printed copy of eP60 for tax year to 5th April 2020
You only need the most recent P60, issued in April 2020. The April 2019 one is completely irrelevant to the application.
A few questions –
•Do I need cover letter/supporting letter from myself and/or my husband as I did for my original visa application?
•Do I need to provide my P60 on top of what is listed above for the financial requirement? I don’t have a hard copy from the previous year, only the electronic version that my employer sent so was going to include this but can try get an original if this is a requirement (I can’t remember if I read this in the guidance).
1. No, you don't need any cover/supporting letters, unless there is anything you need to explain about the application, such as previous refusals, criminal convictions, or reasons why you can't provide the correct documents.
2. No, you can provide the electronic one, but it's worth having the employer letter confirm it is authentic, along with the payslips.
