Hi there
We’ve been diligently collecting the cohabitation evidence over the last 2 years thinking we will beat the system this time instead of scrambling at the end. However, we might have to move just before the ILR application and put down the new address in the application form.

Does that create any complications? Would we need to provide any additional documents to prove the new address?

You'll have to provide the same proof of the right to live in the property as you would have done for the original address, so land registry document and most recent mortgage statement or tenancy agreement depending on your circumstances. If you're buying and the land registry document is not yet available you would need to provide whatever paperwork you have from the lawyer up to that point as evidence.

Then for the correspondence, most of it would be from the first address but you should try to get something for the new address too, just for completeness.
