Strawberry cake without using powdered strawberry gelatin?

Unless one can purchase powdered strawberry gelatin here?  I've only see the blocks/cubes and every strawbery cake recipe I've found uses the powdered strawberry gelatin mixed as a dry ingredient, then add eggs, etc.

I think SkyCo sells a Duncan Hines Strawberry Cake mix but I'd like to make it sooner than ordering from them.

I found powdered Sugar Free strawberry gelatin at Sainsbury's, I think I'll use that.

Thanks, Mindy.  I ended up using the SkyCo delivered cake mix afterall.  It arrived so quickly, I used it instead of making the cake from scratch, and my kids got into the strawberry gelatin powder. :-\\\\

But the cream cheese frosting I did make from scratch!

OK, I am going to ask a very dumb question.  And as you know I am not a master chef (Not even with all the recent cooking I have been doing ;D

So, if you cook with gelatin, does the cake not gel?  Just seems like it might and if not how can it not?  (I've confused myself now with this question!!!) :-\\\\  Thanks!

Stacey17, I think the gelatin does gel slightly but because it is dispersed throughout the other ingredients (you add it as a dry powder, not made up in hot water), there is not distinct jelly form in the cake.  Does that make any sense?  I don't know if I explained that properly.  The jelly molecules are too far apart to make a jelly, they just attach to the other liquid in the cake but are too small (to be noticeable).

I made a butterfly cake for my son's 3rd bday with the SkyCo Duncan Hines strawberry mix.  I suck at cakes, so I'm glad he liked it.  As long as it has colorful sweets on top, he is happy!

That is no lovely cake, my friend.  But you are kind.  It doesn't even have antennae.   ;)  It was the best I could do, given that I am interrupted almost 24 hours a day and certain tasks are just impossible!

But he liked it and ate the candies, left the frosting and cake alone.

Thank you so much!!  I used to make cakes when I had more time (like a decade ago).  How the mighty have fallen.

Here is my son ('scuse the red eye) with his cake:



This is my daughter when she was 1 year old.  No cake, just a store bought scone with some blueberrry jam.  That is waaay more my speed!
