Name that curry
« on: March 22, 2005, 09:34:21 AM »
I really love curries but the trouble is I never know what to order. I usally get a chicken tikka balti. Sometimes Frank orders me something new but I never can remember the names. Can someone name some curries and explain them please.

well, my fav is a lot of people's faves: chicken tikka masala.

i love it, the sauce tastes like spiced tomato sauce....so smooth and creamy and lovely.

if i'm going to eat indian, i'll eat what i like.  I've tried a lot of others, but that wins with some pilau rice and naan.  MMMMMMMM.

korma and passanda are very creamy and mild

massala -  tomato & cream sauce mild-medium spicy

dhansak - a lentil sauce, slightly sour and usually medium spicy

jalfrezi - has great big green chillies and lots of vegetables in the sauce,  very spicy

What other meats are there? Do they have different names also?
Also by "creamy" does that mean smooth? Im just picturing white cream pasta sauce.
What exactly is Keema? We get Keema naan sometimes.

Chicken or lamb bhuna is my current favorite - much flavor, less sauce :)

I’m no curry expert (although I play one on TV), but The Curry House website has a useful glossary for different curries:

http://www.curryhouse.co.uk/glossary/curries.html

It even has little American flags when they translate e.g. prawns into shrimps. Might come in handy  [smiley=chef.gif]

If you are ever in India, do not order chicken tikka masala.  It does not exist.  It is more of a British thing.

Keema is like mince meat.  It can be beef or chicken.

I'm not up on the British curries as we rarely eat curry in restaurants/takeaway. My mom's family lived in S. India for 5 years in the 50s and that experience has shaped their culinary palette - and mine. When DH and I want good curry, we make it ourselves! Goan prawn curry is fabuous. I also do a Kerala style coconut curry which you can use on any type of meat.

Keema is also good and easy. It's often got peas or potatoes in it.

Aimiloo, there looks to be a really good S. Indian restaurant on Marylebone Lane near your house. I think it's called Woodlands. It's vegetarian but if you go order the masala dosai, I think you'll really like it!
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

I always hated curries until about 2 months ago. Now I'm just starting to learn what I like.

I really like kormas. I can't really stomach spicy things (which is a pain as I love mexican) but if I eat enough pompodoms then I'll be okay.  :)

And I prefer them to be vegetarian such as potato and spinach.

On another note, they've just opened up Spicemania in Leeds which is an all you can eat curry buffet. It's not half bad, for a buffet and for £5. And you get ice cream at the end of it.  :)  (idea for those who want to visit Leeds... hint hint... if you don't like curry then they've got Wokmania (chinese buffet) and Pizzamania (pasta/pizza buffet). )
There are two things in life for which we are never truly prepared:  twins.

Korma (chicken) = Very mild and aromatic; creamy  (uses milk, yoghurt) with almonds and saffron.

Madras (chicken) = hot in a tomato based sauce with lots of spices

My favourite vegetable or side dishes are:

Sag Aloo (spinich potatoes)
Mushroom Bhajee - mild, aromatic, dry-ish

Maybe it's different in India, but in Britain, keema is (almost) always minced lamb.
