What's for tea at your house tonight?

Chicken, mash and beans.

Leftover flank steak from the slow cooker - it was OUTSTANDING!!!  With fresh green beans and carrots from the market.

MMMMM. and so easy!

Last night I just had cheese toast and some fruit.  Can't eat much before hockey training!

Last night was chicken tikka masala w/garlic & corriander naan bread.  No rice because I forgot to start it on time!  Argh!

Tonight it's black tilapia w/a dill sauce, corn on the cob and either sugar snap peas or yellow beans.

Acorn squash, tomatoes, chard and boiled potatoes - all stir-fried in olive oil w/chicken drumsticks.

We're using up all our hodgepodge of leftover veg in preparation for our Saturday farmer's market run.

Tonight is chicken fajitas (with out the tortillas!) and my homemade guacamole

Can I just say that every now and then I really miss being a single girl? LOL. Of course I'd never trade in dh to be alone, but Liane I have to say that I would LOVE to have cheese toast and fruit for dinner, but since I'm the one not working and dh needs a big dinner to keep him going since he works nights, it's just not an option. Late yesterday afternoon I was eating some olives and thinking "gee, I'd like to just have these olives and some cheese and call it dinner." Sigh. 

Having said that, I think we're having burgers with extra-lean free-range beef and low-fat oven chips tonight - it's the easiest thing I could come up with!

But, Anne, I have a family of 4 and we sometimes have nights like that.  Dinner is made up of cheese, biscuits, hummus, pitta bread, olives and fruit.  Sometimes a big meal is just too much.

i'm with you anne, i miss it too!  i could kill for my garden burger and fries nights!!!!!

but also peedal has a point, we had dave's brothers over and i made a chicken pasta salad, a 4 bean salad and sliced some tomatoes, fresh motz and basil and it was the biggest hit!

But, Anne, I have a family of 4 and we sometimes have nights like that.  Dinner is made up of cheese, biscuits, hummus, pitta bread, olives and fruit.  Sometimes a big meal is just too much.

Wanna swap dh's from time-to-time?  Mine would starve if I gave him that - he hates cheese and he hates olives. And while he loves his veg and fruit, if dinner doesn't involve some sort of meat, it's a snack, not dinner.
