OMG, Stacey I totally forgot that I actually do have some sweet potatoes in the cupboard! That's exactly what I'm going to do!!!!!!  ;D

pork shoulder, cooked  in the slow cooker all day, with a jar of green salsa poured over it, then shredded, and served in flour tortillas with fried onions & melted cheese.

I have a nice big batch of Italian veggie soup in the slow cooker just waiting for me to get home!  Just like having someone home making dinner for me - but not nearly as nice.   :-\\\\

Made a big batch of chili last night, so I'll have that with some lf cheese sprinkled on top w/ a side salad and possibly a wholemeal pita.

i am out for dinner tonight, so a salad i think...

but i have to say, love is when your husband hacks the head and tail off a rainbow trout so you can cook it.  i honestly thought he wouldn't do it, and had no issues whatsovever

my hero.  ;)
