Hubby's cooking some kind of simple pasta dish - sans heavy sauce, just oil & veggies or something like that (oh yeah I saw pancetta out there too) -- he's more the 'throw odds & ends together' kind of cook here, I do more recipe-inspired productions.  We had a hooooge (that's Norfolk dialect ;) ) pub lunch today in Harrogate & the weather wasn't half bad either -- took a little stroll through the park after lunch.

And (I am still shaking) -- I drove us home from Harrogate to Horsforth -- which was my first time driving over here ever.  I think I'd have been a lot more comfortable with the experience except that his car is CRAP -- it's really difficult to get it into different gears...the pedals are v close together (IMO)...and it's so tiny inside, when I'm driving I have to pay attention that my thigh doesn't end up resting on the knob of the stick shift. :-X  Funny thing -- I didn't notice another car all the way home. :o  (I know they were there!)

I don't know how to cook and Jon is always complaining that when I do cook, it's always for other people so this week I'm making dinner every night. I've gone through all my cookbooks to find something I think I could make:

Mon: French bread pizzas with artichokes and a tomato soup.

Tue: Risotto

Wed: Conchilia from Pisa. (pasta in ricotta sauce. I've made it before. v nice)

Thur: French onion soup

Fri: The piece de resistance: potatoe and goats cheese tart. I'm sooo looking forward to trying that out. Looove the goats cheese.

Hopefully I'll be able to get my tired butt home every night and cook it. If I do, I'll have a very happy hubby.  :)

Ashley, we're waiting on the update?  How did your week of cooking go?  And what about the goat cheese dish? :)

Do most stores have turkey mince?  I didn't really look cause Rich didn't think so. (As if he would know though!!!)  I want t do meatloaf with it, and chili. (Need recipes for these of course!)

Tonight Rich made his famous sweet and sour chicken stir fry with rice.  Very yummy!

A tomato, chilli and garlic sauce, liberally dosed with mascarpone cheese over courgette, green peppers, onions, mushrooms and pasta.  It was so good that hubby asked to have the leftovers for dinner tomorrow night.

Made both veggie & meat samosas on Saturday night & ate them again last night.  So good!  For my first attempt in making an Indian dish for bf, it went well...he jokingly said I'd make a good Indian wife!  ;)

Well DH was hungry after the big lunch so i cooked.  I made a chicken and mushroom sauce over fresh pasta:
drained one can of mushrooms (low sodium)
chopped one shallot
Chopped 4 cloves of garlic
a glug of olive oil.

Sauteed the above (actually added mushrooms after a few min).   Added in some dried basil and oregano.   Added cubed chicken breasts (raw) and cooked till brown. Added a can of chopped tomatoes.  Let simmer for 5 min.  Added 1/4 cup of red wine.  Cooked another 5 min till sauce reduced a bit.

Served over pasta and man was it good!  i wasn't hungry so that's my lunch.  MMMMM.

Tonight, i'm making a pork loin in the slow cooker with saurkraut and veggies and a spinach salad.

:)
