Tonight is not one of our much-anticipated dinners. :P I have no idea what we'll eat... maybe tuna melts. Hot dogs? Grilled cheese? Ack. I don't want any of it.

Hubby is away this weekend, so it was something from the freezer--red lentil and butternut squash and veggie stew.  A bit too much ginger in it, though.  And some naan bread.

We've been working our way through a new cookbook.  Yesterday we had a meatball casserole which reminded me of goulash, so I'll probably alter it and use it for that.

Tonight we had this ham and bean casserole thing which was more like made from scratch baked beans with ham.  We weren't fans so it probably won't get made again.

blackened chicken breasts with homemade pico de gallo and Mexican rice and some homemade tortillas.

I cooked some ham in Coca Cola (a la Nigella) - mostly because I wanted to have some ham for sandwiches, but was planning on having some of that for tea tonight.  Except I don't really feel like ham tonight - I want spag bol.  So I think I'm going to make spag bol instead & just keep the ham for sandwiches (without finishing it in the oven for the glaze).

We're going out to an Italian restaurant to celebrate 1 year of marriage. [smiley=smitten.gif]

Last night we celebrated with friends the publication of hubby's textbook on Anaesthesia. I made starters of smoked salmon/avocados/chevre/chives, then a main course of cod with chorizo and sherry sauce (Bibendum's recipe) and Potatoes Antico Modo (thank you Martha Stewart). For 'pudding' I made a blackberry brulee--was meant to be rhubarb but Tescos had run out and I had to substitute something similar last minute! We also had a cheese course after the pudding--I love this cheese course thing in the UK, I am such a huge fromage fan!

Tonight... probably a very basic pasta after last night's efforts!!
