Texas cornbread from the 'Hairy Bikers- Mum Knows Best' cookbook. 
However, after reading the last few posts, I wish I would have made a meatloaf instead.

I saw that recipe, it looked pretty good. Though I have to say having lived in Texas nearly all of my life, I've never had cornbread like that.  ;) How was it?

Tonight we are having pork stuffed peppers.

Were having dinner at the In-laws tonight I think Dh said it was a Roast Turkey with all the trimmings. My MIL is an excellent cook!!  [smiley=chef.gif]  [smiley=2thumbsup.gif]

It was pretty good, I had never heard of it before either.  I left the jalapenos out due to the girls.
I'm making tuna noodle casserole tonight.

Thai green curry chicken with rice and prawn crackers. Had thai food out last night too! I'm on a thai binge.

Taco salad...  I haven't had one for ages.  That sounds delicious!!   :P

Wednesday night's meatloaf was only so-so.  I tried a new recipe using salsa but I should've used only 1/2 cup because it was a bit too moist (almost wet) and a little too much tomato flavor for DH.  Oh well, live and learn.   :)
