I'm making up some form of a chicken and rice casserole using leftover chicken. It will have mushrooms, green onions, cream of chicken and white wine soup, etc.

Taco salad. Yeah, I said that for last night, but I bailed at the last minute and made Kraft mac and cheese instead.

Looks like I am off to J's parents for an easter supper- roast beef and lots of veg.  Amazed that she actually invited me along- considering she hasn't invited me to either J's brother's or J's birthday meals... ::)
But that's for another thread...

Yesterday I made a Gammon Joint. My mom always makes ham for Easter and I wasn't willing to give that up! Basted it in pineapple juice, brown sugar, and put a ton of cloves in it. Also made Scalloped Potatoes and homemade Applesauce. MIL made veggies and we took it all over their house.

Tonight, I think we're having Grilled Chicken with Potato Salad. I boiled way too many potatoes for the Scalloped Potatoes!
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

Birthday dinner for J. Taking him out. Amazingly his mum let him go  ::)

Me thinks I will be having for starters either
Soup of the day if it appeals or the Half pears baked with cinnamon, cider and honey filled with smoked ham hough and cream cheese dressed with balsamic reduction

For the main either Panfried pheasant breast on grilled black pudding accompanied by king scallop finished with thyme syrup or  the Red snapper , seabass and cod served with oriental rice , garlic yogurt and roasted almonds.
Plus a lovely selection of steamed veggies. 

My mouth is watering and I can't wait!

Baked ham and a big dish of scalloped potatoes, that was always Easter dinner at my house.  Plus the other assorted favorites like jello and devilled eggs and Waldorf salad and homemade rolls and.....  yum!   :)

Ditto! Though with different assorted favorites. I come from an Italian family, so we'd always have lasagna or stuffed shells on a holiday, plus stuffed artichokes were always an Easter-must have. This easter was nice though! We made up for the extra dishes in booze.  ;D That's the way my in-laws work. I don't mind.

We had Emeril's Fried Chicken, Potato Salad and Salad.  I have two Brits visiting, so I figured I'd do it up American style  ;)
