We had minestrone soup again.  I *will* freeze it next time, 3 nights in a row is a bit much...

Love minestrone!  I usually make loads like you did and freeze the rest.  Haven't made it in a while, maybe I will this week.

Hubby had pizza and I had some soup from the freezer--my Caribbean veggie soup.

Probably going to be some pasta noodles with some homemade sauce but no meat...shopping doesn't come in until tomorrow.   :(

I made a crazy mezze/tapas/bits & pieces thing:  homemade hummous, cucumber slices, pita bread, grilled chicken with harissa seasoning, couscous (was boring & too much!), and this artichoke & pine nut recipe that I got out of my new Jamie Does... cookbook.

I was starving before supper & then I couldn't finish what I had put on my plate.  So I bunged it into a container as a 'salad' for tomorrow - and then DH was cross because I bagsied the 'salad' & I guess he wanted it.  Lol!

Nando-marinated chicken breasts, crash potatoes, and corn on the cob. It was a very 'yellow' meal!  :P

pork chops, baked garicky creamy spinach with smoked cheddar and panko crust, sauteed peas with lemon and basil.

I was a cooking machine yesterday and made both tonight's and Wednesday night's dinner.  Tonight it's my very veggie chili and tomorrow it's a minestrone soup.

Pork chops done on the GF grill, a baked sweet tater & some steamed veggies for me Dh is having steamed rice & not sure what his other side dish will be if he has one.
