Nigel Slater's Potato and Smoked Mackerel Dauphinoise, some salad & probably white wine.

Split pea soup with crispy streaky bacon thrown in rather than ham.  Complete with BF's homemade bread that he baked yesterday.  :)

That sounds very romantic and so very sweet of you, hope J appreciates it!

PB, hope you and J enjoyed your meal.

He did appreciate it a lot ,and we enjoyed ourselves and our champagne :)

Tonight, turned my leftover potato soup into a vegetable chowder.

Homemade french onion soup, toasties, and a side of broccoli. First home cooked meal in our new flat! Ate nothing but takeout and ready meals for the past 4 days... So glad to have a great new kitchen. :)
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

Skinless chicken breasts done on the GF grill, I had steamed veggies & steamed rice for my sides Dh wanted a baked tater but the taters we have aren't any good so he had a few potato croquet's & some baked beans.

Cheesy chicken and leek pie with leftover roasted chicken.

That sounds yummy.  Can I get the recipe?  I'd love to try it.

That sounds yummy.  Can I get the recipe?  I'd love to try it.

Ummm... I don't really have a recipe. But basically, I take enough shortcrust pastry for a pie (either shop-bought or make my own), cut into two bits and roll out, etc. (Let me know if you want me to PM you more specific directions on pastry and pie stuff... or you can see my recipe for homemade pastry in the "what was the last thing you baked" thread.) For the filling, I sautee two washed and chopped leeks and a clove or two of garlic in butter and olive oil until soft, then toss in a big spoonful of flour and stir around until cooked, then add in a liter of hot chicken stock (homemade is best, stock cubes are my usual fallback) and add the cut up roasted chicken and simmer until thickened. Then I just add a handful of grated cheddar and stir in until melted in. (I sometimes use Laughing Cow cheese triangles, which melt easily and make it really creamy and tasty - you can use two of those, if you like, instead or in addition to the cheddar, depending on how cheesy you like it.) Let the mixture cool a bit, then tip onto the bottom pie crust and then top with the top pie crust, poke some vent holes in, brush with egg wash and bake at 180C for about 30 mins or until browned on top. I do different variations on the fillings all of the time, sometimes I use bacon if I have some on hand, sometimes I add mushrooms or peas or whatever I have that needs using, either with the leeks or instead of the leeks. I season the mixture with sea salt and cracked black pepper, and sometimes I add other herbs if I feel like it. I love making savoury pies and tend to just toss in whatever I have around!  :)

ETA: If I don't feel like dealing with pastry, I sometimes do a similar filling and just put in a casserole dish, top with mashed potatoes and some grated cheese and bake until the potatoes have browned a bit and cheese is all melted. Also yummy!

ETA: Hahaha... sorry, I forgot to say sometimes I add a splash of milk or cream if I want the sauce to be extra creamy, so you can do that if you like.  :)

Thanks, Jewlz.  I can't wait to try this.  I appreciate you jotting it down.  I usually throw what I have together, too, but sometimes need other ideas.   :)

However, I'm now officially hungry, but I don't think anything but this pie will do.  You've spoiled me to anything else.   ;D  I was going to make another chicken dish tonight, but may have to try this out instead.
