Sloppy joes made with ground turkey and oven chips. We haven't had sloppy joes in years! It's one of those meals where afterwards we ask ourselves why we don't have them more often. And the answer is always we don't know why. Just one of those things.
Let them eat cupcakes!

I made a courgette and chicken curry which was very light on the chicken and had it with cauliflower rice with peas in it.

Was pretty nice actually :)

That sounds yum! I had to look up cauliflower rice, and now I have to try it. :)

I actually really like it, I just shred it in the food processor and then saute it with just a small amount of EVOO and then add peas and sometimes spring onions, you can at this point add a beaten egg to make egg fried cauliflower rice.

It's quite a nice way to increase your veggies and lower the carbs :)

I'm on 800 calories or less and 80 grams of carbs until Friday :O

DH is making kheema mattar chawal - some kind of minced lamb curry. He had a "sick" day today, so I reap the benefits. :)

Lightly curried winter squash soup made with leftover squash from the other day. You'll see a theme here for me this week...   :)
