Last night I made the oven fried chicken breasts as mentioned earlier in the thread, baked potatoes, and carrots.  DH had rice pudding with raspberry jam for dessert.

No cooking for me tonight! I'm participating in a safari supper. Does anyone else have those in their communities? It's for charity and is really fun! I'm teamed up with my aunt, and we've been assigned a starter. I made vichysoisse (sp?) and she made a spinach & ricotta tart with a salad. Yum! The rest of the meal is a mystery!

What's a safari supper? is that like a progressive dinner where you go to a different person's house for each course?

Homemade mini-pizzas = I bought the pizza bases & shredded mozzarella.  Used my own red sauce and cut up veggies for the toppings (onion, sweet pepper, mushroom) plus a drizzle of extra virgin olive oil over the top.
Ring the bells that still can ring

That's how the light gets in...

Yes, but you don't know where you're going for each course until that night. We all met at the village hall at 7pm ish and got our assignments. And you also don't know who's coming to your house for the course you're making. And you don't know who you'll meet at various people's houses throughout the night. It's great! We really lucked out for our dessert course -- we were told to go to Lorna & Geoff's, who own the local hotel. We had a whole hotel bar of drinks to choose from, as well as 4 scrummy homemade restaurant desserts at our disposal!

The best part of it is that we're a small village community, so you can usually walk wherever you have to go for various courses.

Has anyone else noticed that when you first start spending a lot of time with your significant other than you tend to eat more than you usually do or foods that you might not otherwise eat?  I'm struggling with this and don't know what to do about it - he loves very fatty foods more often than not & I'd rather eat a bit healthier!

YES!
And we thought we'd conquered it after a few years of living together and once we got married...but then we moved to the country and I have a nice big kitchen and was home for 6 weeks before starting work. I baked....and nested....and baked and cooked yummy pasta things- fresh with veggies and things but still lots of carbs and curry sauces and things...and we realized that we had become very unhealthy. And it was a mutual decision to cut certain things out and only have *treats* very very occasionally.

I love food and if I feel deprived it makes me grumpy. But we've both lost a stone each and I know my hubby feels better ( he is very tall and slender and feels the weight on his tum when he gains).

It's a difficult one, though!

Absolutely, onetiger! It's terrible! But it's not just me -- he's started eating much more than usual since we've been together too. It's like we bring out the worst in each other. We really try to be good when we're together, but it's tough. I keep thinking that it'll get easier if and when we ever move in and have our own house and are with each other full-time, but I'm not sure about that. I think I might start nesting and baking like you, jennydee!

I forgot to add that I'm the one that does the most whinging now that we're eating healthy!

My hubby is the one that keeps me honest. I hear his voice in my head when I want a pecan danish from the bakery near work.

onetiger- I realized that my reply wasn't very helpful at all. I sympathise with your boyfriend about the fattening foods...did you mention before that he loves traditional indian curries and things? it must be made harder by the fact that indian food is just SO amazing with all it's creaminess. Might you suggest cooking and use some of the lower fat sauces you can get in the jar? They are tasty and you can almost not tell the difference in the fat content! As a purist he might have a hard transition...but surely he'd love to be cooked for?

Not all curries are fattening. Even homemade ones don't need to be creamy at all. Last year I spent two weeks on vacation in Mauritius, staying with family and eating nothing but Indian foods. Curries twice a day! And I actually lost weight! Yup, on vacation. I lost weight! Only 4 lbs, but still! The curries my relatives make don't usually include any cream at all. They're tomato based and are really delicious. You just have to remember not to overdo it on the rice! Also, they tend not to eat fattening desserts -- just fruit for after. That makes a big difference as well.

Tonight we're going to the movies, and I'm gonna pick up some Subway sandwiches on the way.  Still haven't decided if I'll have wheat bread or one of those low-carb wrap thingies.   :P
