Now let's see - I can get my hair color, my kitty's food, my mascara, and now pierogies!!!!  WOW!  There really is no reason I can't move there!  hehehe   Oh - and my dear sweet Simon!!!   :-*

Good healthy meal tonight. Baked chicken with oven-roasted red onions and aubergine, drizzled with olive oil and fresh basil. Yum!

Taco salad.

I use ground beef and season it as for tacos.  In a large bowl I mix shredded lettuce, chopped tomatoes and shredded cheese.  I add ranch dressing and toss. 

Once the ground beef has cooled, I add it to the salad mixture and right before serving, add crushed tortilla chips.  Save the chips for last so that they don't go soggy.

A similar version is a staple in my house.  The only difference is we use Thousand Island dressing and Nacho Cheese Doritos.  I may have to try ranch dressing next time, though.

I think we're having pizza or some other kind of take-out tonight.  I've had a horrible, icky, nasty day, so my husband has offered to treat me!

Last night I made spaghetti (whole wheat, of course) and meatballs.  I swear, it was the best thing I've had in about five years!  I'd never made homemade meatballs before, but now that I know how, I probably won't stop! DH isn't a pasta person, so he had a grilled ribeye, new potatoes, and peas.

In the middle of roasting a lemon and thyme chicken with all the trimmings, so we'll probably have the leftovers for dinner.

Roast lamb stuffed with feta,garlic and herbs. Mashed potatoes and veg ...I just forgot I didn't get anything for pudding  :-\\\\

Beef joint, mashed potatoes/gravy and york. puds. for the fam but for me swordfish and cauliflower.

spinach stuffed Turkey meatloaf  and mashed potatoes for DH..  also green beans with oil & balsamic vinegar and  garlic..

Wow -- I'm just noticing how many of you there are who have to prepare two completely different meals for you and your other half. Is that really so common??! Is it because all of you are doing South Beach or just because you're married to finicky eaters?

I'm not doing South Beach-- Marilu Henner's total health makeover..  DH is NOT a finicky eater  but he doesn't feel it's  'enough"..  he also doesn't 'buy into it all".. LOL..  hhmm.

tonight I am making  a meatless and rice stir fry for us..  .. and warming up leftovers..  adding a bruschetta for an appetizer.. (if i can get to the green grocer in  time.).

This past weekend was a total blow out.  I ate constantly. 

Saturday:
A massive bowl of beautiful huge shrimp and sauce, then for dinner a rotiserrie pork loin roast on the grill with grilled potatoes, with onion and garlic and olive oil, and steamed green beans.

Sunday:
Turkey, mashed potatoes, dressing, salad, marinated greenbeans and grape tomatoes, grilled steak, pretzel jello, chocolate chip cookies.....

It was mother's day here.  We eat our way from house to house.

For dinner tonight:
Slim Fast.
