Low carb meal ideas

Im really getting bored with my low carb diet. I read that most people fail at this diet because they get bored with food choices. Anyone have any low carb ideas/recipes? My bowls of broccoli are really getting old  [smiley=puke.gif]

Taco salad without tortilla chips....  lettuce, cheese, seasoned taco meat, all stirred up together with caesar or ranch dressing.... mmmmmmmm.

Yum!!!!  I do spicy chicken tenders.  Cut chicken strips melt butter, (tablespoon)  add hot sauce (Whatever one you like)  dump in chicken then put in frying pan serve with blue cheese dressing.  I'm not a complex cook :P

Are you doing more of an Atkins or a South Beach low-carb thing?  If it's SBD,  go to www.southbeach-diet-plan.com/forum and poke through their recipes.  For Atkins, there's some stuff at http://www.camacdonald.com/lc/Cookbook/

When I did low carb I always liked to grill ( or caramelize in a pan) veggies like peppers, sweet onions, squash, leeks, carrots, etc. and top the with chunks of goat cheese- YUM! If you want more protein, this is also excellent combined with chicken.

My fave low carb recipe is for a breakfast type meal.

2T rough cut oats
1/2 C cottage cheese
1/2 C fruit ( I use berries)
6 chopped almonds (roasted, unsalted)
dash of cinnamon

Add water to the oats (I eyeball it but I am thinking 1/4C) and microwave for 2 min. Add the other ingredients, stir well. Zap again for about 20 seconds. Voila! It looks pretty mushy but it's really yummy and only about 220 cal. This is a Zone diet recipe.

A meal I came to love was a couple of large mushrooms, take stalk out, a drop olive oil, season to your own taste and stick em in the oven, when they are nearly done crumble some cheese on top (cheese, chives, cheese & spring onion however you fancy) put them back in for a few mins and serve with some steamed asparagus - YUM!

I have also seen a similar recipe but with an aubergine (and I can't remember the American name for it at this moment, but you know what I mean!!)

Thanks for the ideas. Especially the mushroom idea. Fantastic. I always have fresh mushrooms in the house.
Also what are rough oats? I have seen this in the SBD recipe book. Are we allowed any oats on this diet?  ???

Thats why I liked it mushrooms are so simple to deal with and always around :)

I am probably wrong, but I think rough oats are without the husk (or whatever the outside) is called, before they are milled or like "rolled oats", so you get the fibre.  Waitrose do a rough scottish oat in a navy blue can if it helps :)

Rough oats (to me at least) are also called steel cut. They are heartier and take longer to cook. More fiber. :)

Ever since we went to Spain -- I'm really into roasting vegetables Spanish-style in a large roasting pan.  Cut up in strips -- onions, sweet peppers, halved or quartered tomatoes -- anything really -- you could do courgettes, aubergines, etc.  Throw in some garlic cloves. (may want to grease the roasting pan just slightly)  Take a scant teaspoon of demerara sugar & also of sherry & sprinkle over the top of all the veggies - & toss. Roast for about 30-40 minutes, covered in tin foil. Remove the foil, drizzle olive oil lightly over, and throw in some fresh herbs like rosemary sprigs or something. Roast for about another 20-30 minutes. Delish!  (Would this qualify as low-carb? I think it's very healthy b/c the bad stuff -- sugar & sherry -- is a minute quantity in proportion to the loads of veg.) I have to look for things like this to get my veg -- I'm not normally big on veggies, but I LOVE this.

Carolyn a lot of vegies are high in carbs. I dont eat tomotoes right in fact. Actually Im not a big tomato eater anyway. Im not sure about the other veg you speak of. Ill have to consult the book. I live on brocolli and mushrooms right now along with chicken.

Yes I guess I knew some veg are high in carbs. I take the low carb diets with a grain of salt, I suppose. I remember Oprah saying something once like 'How many people do you know, seriously, that got fat eating carrots?' :P  (You would turn orange - literally - before you could eat that many carrots.)

Funny! My son Brett only ate yellow/orange veg. when he was a baby and by the time he was a year old he had a very yellowish glow to his skin and his nose was nearly orange! I took him to the doctor and he said he is a "carrot nose baby". Its from all the orange vegies he was eating. Very funny! Now of course he is 7 and wont eat anything but PB&J!

Yes!  We can have oats -- just not instant oatmeal.  I tend to buy the "Scottish porridge oats" from ASDA and cook them with some skim milk, splenda (or honey) and cinnamon.  I LOVE them!

As for veggies, well, a veggie is a veggie.  I do limit the sweet ones -- sweetcorn, petit pois, parsnips, etc. -- but otherwise I eat what I want.  I'm way not into the low-carb/high-carb thing because it messes with my mind.  In my opinion, f it's natural, it's okay to eat -- nobody gains weight from a bowl of veggies!
