I've been through too many Navy Family picnics/BBQs to know not to dwelve too deep into the food making process :-X

our waitrose keeps fresh ice, the people wear gloves and is away from the reaching hands of kids thanK GOODNESS!

our local fish mongers is the place for fish-they know where it's at!

This isn't UK related, but while studying abroad in Costa Rica, the meat markets were open air and not airconditioned. I was shocked to see meat just hanging up all around - it seemed so old-fashioned and gross. I guess you could say it was fresh!

My father is from Dominican Republic that's not unusual to have open air markets it may be gross to a westerner but not every culture/tradition is alike. I Remember going to my uncle's farm and on our way they stopped bought a live goat from the roadside market and the housekeeper prepared the meat just in time for dinner. God knows what that farmer could afford to feed that goat sold for our supper. I found it icky but hey that's how life was there ..funny thing he finds fast food disgusting.

But if you take it home and give it a good cooking, it should be fine to eat. 

I've eaten meat from open air markets all over Latin America and Asia and only had a problem once. 

Just  make sure it's well cooked.

Considering the general population doesn't have a problem with it - it has to be safe. I was just amazed and shocked by it. I was 19 or 20 and this was my first time in a foreign country.

I'm sure the level of safety for the seafood is fine as long as it is cooked as well in the UK. I agree, the handling does seem haphazard, but I know in my own kitchen at home, I try, make sure to cook all meat thoroughly and wash my hands as much as possible.

Yeah, I spent some time growing up in Mauritius and the open air markets there were really something. This was back before it was a tourist destination, so things were much more primitive than they are now. Chickens, live and dead; goats, ditto. My mother and I used to soak handkerchiefs in perfume and hold them to our noses when we went shopping just to ward off the stench!

funny enough from all the places I've been the only time I got food poisoning was from a restaurant in Camden ....bad prawns  ;D

lol ... no, actually the perfume totally masked the dead carcass aroma!
