Need Cake recipes...Please

I suggested a Cake Walk for my sons school summer fair.  No one had heard of the idea, but they would like one.  I am now in charge of running the cake walk and also making the majority of the sweets.  If you have any recipes for cupcakes, cakes and so forth I would love them.

When do you need them by?

The school fair is in late June.  I need to be perpared.

I have tons of cake recipes. Is there anything in particular that you like?

There is one mother on the playground who think it is a "stupid american idea", she is such a gem ;) All the others were really up for the idea.

Any sorts of  recipes, I would say easier ones.

There are several cakes and goodies as prizes.  There is a large circle with numbers on the ground.  Children and adults go around the circle while music plays, when the music stops a number is drawn.  Whoever is on the number gets to pick out a cake.  I always had them at school fairs at school and they do at a school that my mom works at in the States.

Goodness, we will all have to have a UKY cake walk at the next gathering ;)  You can always come to my sons school fair in June ;D

Luscious Lemon Poke Cake

Prep Time: 30 min
Total Time: 4 hr 30 min
Makes: 16 servings


 
2 baked (9-inch) round white cake layers, cooled 
2 cups boiling water 
1 pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Brand Lemon Flavor Gelatin 
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed 
 
 

PLACE each cake layer, top side up, in clean 9-inch round cake pan. Pierce cake with large fork at 1/2-inch intervals. 
STIR boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved. Carefully pour gelatin evenly over cake layers. Refrigerate 3 hours. 
DIP one of the cake pans in warm water 10 seconds; unmold onto serving plate. Spread with about 1 cup of the whipped topping. Unmold second cake layer; carefully place on first cake layer. Frost top and side of cake with remaining whipped topping. Refrigerate at least 1 hour or until ready to serve. Decorate as desired. Store leftover cake in refrigerator. 
 
It doesn't have to be LEMON -- I've done almost EVERY flavor but lemon ;)

I made that cake for my late grandfather about 20 years ago for his birthday one year!  Only I did a "rainbow" version where you used different flavours of Jell-O.  Very pretty.

I must be delirious, I read this topic as "Need cake....Please" and thought "You and me both girl"  ::)

I grew up in SW PA and I though I have heard the term, I had no idea what it was either. Thanks for the explanation! Sounds like a lot of fun! :)
