Butternut Squash

I have a large, organic Butternut Squash from the Riverford farm boxes here and I need to learn what to do with it, any suggestions please?

Go easy girls, I am a reluctant cook  ???

PS) is there anything that tastes similar to our (UK) swede in the US, or is this my closest option- I will miss my swede

No help from me,, but I see them doing kewl things with butternut squash all the time on 'ready steady cook'.  I have seen them cut it into cubes and bake it. Have always wondered what it tastes like. Let us know ;)

I certainly will Tebs- I want to treat it like a swede, peel it, boil it and mash it with butter & pepper, but then I am sure I recall someone telling me they get cut in half and baked (but that could be sweet potato!)

Ooh Courtney, now that's the ticket! Thanks! I like the sound of it with sage & onion! This is a zillion ways with squash- shame I only have one, but this is my practice one!

Don't suppose I can lure you into advice on artichokes too ;) LOL!

Artichokes? Oh, you shouldn't even bother with those. Too much trouble. Make it easy on yourself and just send them to ME! ;)

Whenever i get a butternut squash, i quarter it, drizzle it with olive oil, salt & pepper... roast in the oven for 30 minutes, peel off the rind, chop up into bite-size pieces, and add to cooked rice with butter, grated cheese, a bit  salt & pepper and a finely chopped chilli or dried chilli flakes.
So easy and so nice!

Yes, it is, I was trying to tell my mom about it, finally we figured out the other name for it! Butternut squash I cook for my son, it was one of his first foods, I would just halve it, smear on some butter, and bake it until it was soft, it's good like that for adults as well. Anyone like spaghetti squash, and do they even have it here, I don't know if I've ever seen it. I happen to like it a lot, and it's so fun to make!

My Tesco *sometimes* have spaghetti squash... in a box/tray marked 'mixed squashes'.

Thanks everyone, some great suggestions I am going to try the simple way first as suggested by ca girl (thank you ca!) and then I really like the idea of Otterpop's way but without chili - I am not that adventurous!

I've never made artichokes myself, but i *think* you just steam them.  When they are done (whenever that is!), we used to peel the leaves off, dip in garlic mayonnaise, and then you sort of scrape the flesh off them with your teeth!

Oh right... are they artichoke hearts? (rather than the leaves?)... im not sure how you would prepare those!  Mystery food!  ;)
