It's easier to do during stew/soup season. 

I really wish we had a compost heap for leftovers as well.

This is very true!  In the colder weather, we tend to do a pork/beef roast on Sunday, and then the next day have sandwiches out of it or something like that.  

A compost heap would be nice, but it's very difficult when you live in a flat!  Not sure how my landlady would react to that lol

You know, same as if you made hash browns - make it into little patty shapes and fry it.

Me neither. We never have cooked cabbage anyway so I would never have any left over to make bubble & squeak. Mind you people have been known to put all sorts in it, whatever you have leftover - carrots, spinach, whatever.

I like making potatoe cakes with left over mash...a little flour and egg to bind it and a skillet with a bit of hot oil and you flour your hands and take a scoup of mash and flatten it a bit and than fry them to golden brown on each side....mmmmm

I try to cook just enough that will feed us....my son doesn't leave left overs.......but in the winter I like to make a big pot of chicken and dumplings or something warm and filling.......

I don't really do left overs either, unless it's roast beef for a sandwich the next day. I am quite relieved to find I am not the only one.

I am not creative enough either to make another dish and am a bit funny about "old" food. I can't even bring myself to eat bread that has been open from fresh/frozen for 2 days- not even for toast  ::)

I love leftovers, and eat them all the time, often when I cook,  I do loads, and then figure different ways to eat it. For instance, if we do chicken, cooked however, I can turn it into a chicken salad for sandwiches, just shredded with a bit of mayonaisse, and squished up with a mixer. Left over mashed potatos, mixed with a bit of tuna, make wonderful fried patties, like someone mentioned before. Only they didn't use tuna.

Can be anything you like really,my favourite is leftover spuds and sprouts mashed together and fried in butter (preferably not in a non stick pan)served with leftover chicken with plenty of tomato ketchup on top.

I do a cheater's version of bubble and squeak. When making normal mashed potatoes, I add a bit of chopped frozen cabbage and chopped fresh onion to boiling potatoes about 5-8 minutes before the potatoes are finished cooking.  Then mash as normal.  Yum -- no waiting for the next day for bubble and squeak.

Don't bother with Tesco's ready made bubble & squeak... it is really disgusting.
Better to make your own!
