Raisons, Sultanas, Currents, etc

Do you store these in the fridge?

I've been practising my Welsh cakes and I seem to have an abundance, don't know how to store them....
Never criticize a man until you have walked a mile in his shoes....that way you are a mile a way - and you have his shoes....

Oh, man, I'm the Welsh cake queen. Oy.

Keep them sealed either in zip-lock bags or in tupperware type things in your kitchen cabinet. No refrigeration necessary. ;)

How did your Welsh cakes come out? I OD on making them at our twice-a-year village fetes and then don't want to see another one for months!! ;D

Raisins, sultanas, currants and all dried fruit keep for ages in an airtight container in a cupboard. No need to keep in the fridge unless you have a particularly bad ant problem where you live.

Thanks everyone!  I was worried about ants - but that might be carry over from putting *everything* in the fridge in the USA.

Question about your Welsh cakes (I am competition here with my MIL - so they have to be perfect!!) - does your recipe call for honey?  Also - I used *all spice* instead of *mixed spice* - is that acceptable?

They came out a little too good!  I ate the whole batch!  Of course I burnt the first 5 of them - so there were only 5 left!  My MIL leaves hers on the stove for ages - I guess my stove and grill thingy gets hotter than hers.

I found something really strange online as well...when I was looking for the grill thingy on Ebay - there's a lady that sells Welsh cakes on Ebay!!!

I've never heard of putting honey in Welsh cakes, so you'll have to let me know how that tastes! I don't think it's the traditional way of doing it, but it may turn out to be better! And, yes, allspice is fine to use. Sometimes I only add nutmeg, but last time I used allspice and it was great.

I did think that these cakes were sweeter than  my MIL's...must be from the honey. It only calls for 2 tsp of it....

I'm happy to share mine! It's a very old-fashioned traditional basic one. I'm not home right now, though, so can you wait until next Tuesday or Wednesday?

When we do Welsh cakes at the Village Fete, we all supply a ton of dough and then we do the actual cooking on griddles right there -- so they're fresh and hot for people to buy. Last time, we each had to make NINE POUNDS of flour's worth of Welsh cake dough!

Tell me about it! And there are seven of us on the "team," so that's 63 lbs! And that's only of flour -- the finished weight must have been ... well, I don't even what to hazard a guess! But we always have the longest queues of any stall and we always run out ... so I'm worried they're going to make me produce 12 lbs next time! Aaaack.

I'll send you the recipe on Tuesday! :)

I've never done the cooking at home - just the dreaded dough-making. At the Fete, we have two big professional style griddles that we get on loan for the night. In a pinch, you can even do them in a big frying pan, although your stove top griddle sounds really good!!

I just bought a food processor that has a *dough* attachment.  I might give that a whirl after I get your recipe.  Will let you know how it works out.

I looked all over online for a griddle.  My mom used to have a nice one that she plugged in....couldn't find anything like that here.  Found a stove top one some place online and it was like £24.95!!!  I didn't want to pay that much....got mine at Woolies for $4.99! It's a JML one - and it was the last one of the shelf! And it has two sides...the flat side and the side with the ridges for doing burgers, etc.  LUCKY ME!  :)
