If you can find it here is it still called "Monterey Jack". If I ask for it by name will I get the dumb, blank expression from the deli people?

Yes, it's still called Monterey Jack. Yes, you'll get a dumb expression. It does come in red wax....

I too have seen it at Morrisons so it can be found!

Does anyone know if you can freeze Montery Jack cheese?

The reason that I ask is my local Tesco does carry it, but it's not available all the time.

I don't think cheese can be frozen. But someone correct me I could be wrong.

I think Meshell's right, cheese doesn't freeze very well.

Actually you can freeze cheese! We buy a wonderful cheddar from our farmers market that the maker says is fine to freeze - handy b/c she sells it in quite large wheels and much as I love it, 2 of us can't eat it fast enough. Depending upon the cheese, you'll get mixed results. I have read that if you freeze monterrey jack, it may become a bit grainy, but if you are melting it, that may not matter at all. I found this online:

TIPS FOR FREEZING CHEESES:
Freeze pieces of a half-pound or less.

Use moisture-proof and airtight wrapping.

Freeze quickly and store at 0 °F for two to six months.

Thaw in refrigerator so cheese won’t lose moisture; the slower the cheese is thawed, the better.

Use as soon as possible after thawing.

I've frozen cheese quite a lot especially way back when I was part of a food co-op. Just like balmerhon wrote...it is fine if you're using it for baking/melting (like the cheese on frozen pizza etc.) I used to grate it and use it on homemade pizza or in casseroles etc.

I've been visiting friends on the east coast/DC for a month now and my first trip to the grocery store I discovered Monterey Jack is hard to find! This baffled me. White cheddar is just not the same  :-[  I did find it but it was in the specialty cheese section, la dee da.

My other east coast/west coast cultural discovery is grocery stores only sell beer and wine! In California, you can one stop shop and fill your liquor cabinet.

It just goes to show you we have our own cultural differences that are mind boggling within the US! You should have seen my look of amazement when friends explained how they heat their Maine house in the winter.

The funny thing is I am well travelled! But it is these day to day experiences that make you really KNOW a place.
