Tasty recipes for those on a "diet"
« on: September 28, 2005, 04:51:16 PM »
Jamie's been working really hard with losing weight in the past 6 months. He's going back to slimming world with his friend, but I want to help too. What are some tasty things I could make him for lunch? I really llike making his packed lunches for work, it makes me feel like superwife he tells me how much he's enjoyed what I made.
I don't want to make him salad everyday. That's a bit boring. Any ideas?

I love having roasted veggie sandwiches with a coating of hummous on grannery bread (toasted).  Healthy, low fat & yummy!

I LOVE wholemeal pittas with hummus stuffed with chicken and really crispy lettuce.  Bean salads?  Fruit salads? Pasta (wholemeal, of course) salads?  Can't go wrong with homemade soups, either.

What about tortilla wraps? I don't know if you like to make tortillas, but if you get chappatti flour, and make your own, it's a lot better than the white tortillas, and you can stuff them with anything healthy. A bit of cooked chicken, roasted peppers, a drizzle of salad dressing, some bits of cheese, (not a lot) lettuce, roll it all up in the tortilla, and it's a healthy lowfat meal. The thing about making your own tortillas is, you can take away the oil, or just use a small amount, so there is very little fat, and few calories.

I will add to the list of hummus fans- I had a tortilla wrap with lemon hummus and it was excellent. And under 400 cals if I can remember correctly.

Let's take our wigs off in the shopi aisle and fight it out.

My husband takes some sort of salad every day for lunch. The basic components are some sort of cooked grain or leftover potatoes, some sort of bean for the protein (but you could use meat or cheese if you want), plenty of fresh vegetables in a rainbow of colors, fresh leaves (romaine lettuce, raw spinach, rocket, etc) and a simple dressing of oil, vinegar and herbs of choice. It's amazing the variety of tastes and textures you can come up with using this simple pattern.

Supplement this with fresh fruit, yogurt, Snack-a-Jack type rice cakes, a handful of healthy nuts, a smoothie...There's all sorts of neat stuff to have for lunch and still eat healthy! And don't rule out leftovers, if he's got access to a microwave. :)

I looked up a recipe to make homemade hummus, and checked to see if he's allowed to eat it on his diet. He's allowed to have a certain number of "sins" each day, and it's less than mayo. Sins are things like mayo, soda, snack foods etc. I'm pleased it's only a few so he can have twice as much hummus as mayo. :) We're going to give it a try.

We love tortillas! I wanted to get him some spinach tortillas, but I can't find any. He LOVES cooking, so I want to make a little recipe book for him. :) We're going to try to make hummus, and since you've mentioned it, tortillas. We could even make our own spinach tortillas.

With homemade hummus you can control the fact by adding less olive oil and tahini or try mixing in roasted red peppers.

Making tortillas is so easy, I've been doing them for ages, and the neat thing is, you can add whatever extra stuff you want, to the dough!! I am sure spinach added would work, just mix a bit of cooked in with the dough, it will turn out, I am sure. I like them with a bit of flavor, so I usually add a bit of chili powder, or crushed garlic, or both!!
