I made a pumpkin pie on Sunday.

1 baked pie crust (I made from scratch)

1-1/2 cups pureed pumpkin (I cut the small edible pumpkins in half, took out the guts and baked them on a foil lined baking sheet in 350F oven until soft.  Let cool and then skinned them, threw them in the food processor and pureed.  Once pureed, I put the pumpkin in a sieve (fine) and let it drain into a bowl.  That took about half to one hour)

2 eggs, lightly beaten and add
3/4 cup cream add
the pureed pumpkin
I think about 2/3 cup of light brown sugar (or to taste)
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp salt

Mix well and pour into a cooked pie crust.  Bake about an hour, or until set. 

I also decorate it with sour cream diluted with a bit of milk that I drizzle in a spiral on the pie before I bake it.

If it says Libbys, Libbys, Libbys on the labal, label, label you will like it, like it, like it on your table, table, table! The recipe on the tin is the easiest and yummiest punkin pie in the world! I have two tins in the pantry and can hardly wait for Wdnesday to amke them up for Thanksgiving dinner!

My darling, darling husband bought rhubarb yesterday!  He said, 'I'm sure you will be able to make a pie with it!  I have complete confidence in my wife's baking abilities!'

My pie crust recipe (well really my dear MIL's recipe..)

1-1/2 cups flour
1/2 tsp salt
1/2 tsp baking powder
1/2 cup shortening (I use white flora in UK, Crisco in the US)

cut the shortening into the flour (use food processor, 2 knives or pastry cutter)

Once it is well mixed (you want a consistency of small peas - very important to mix the shortening and flour well) then with a fork, carefully mix in about 1/2 cup of COLD water.  You want to mix it only enough so that the pastry comes together.  Do not mix it more than that.  Divide it in sort of half (one for top and one for bottom) and squeeze it into a ball.  Wrap in plastic wrap, squish into a disc and put in the fridge for about 1/2 an hour.  Don't worry if it doesn't look perfect, it will come together in the fridge.   

DO NOT WORK THE DOUGH.  That will make it tough. 

Roll out to desired size. 

that is enough for one pie (top and bottom)

Um, sure.......

crumble is way more forgiving and tastes yummy with rhubarb. I've made it twice since moving here and everyone raves about it.

I burnt my pumpkin pies a little this year, (just a little extra dark on top, forgot about them in the oven, whoops) but they still tasted fantastic! I heart pumpkin pie :P

Oh my gosh, I'm just trying mine now for the first time and it's heavenly.  A bit sweet perhaps, but hey, that's not a problem.  I can't wait for DH to try it!!!  My British colleagues, however, seem a bit reluctant...

i have yet to find a brit who likes pumpkin pie.  they don't get the whole sweet and savoury aspect.
