ha ha no shame in that! We still have 2 1/2 pumpkin pies left!!!  :o My other desserts were much more popular apparently!

anyone want left over pie? I should have passed it off as door prizes when the guests left... no one would take it when offered!

Right. So now that I'm getting ready to make pumpkin pies for Christmas dinner, there are ZERO pumpkins to be found! Help? Anyone? Fresh or canned is fine with me.  Waitrose is out of stock and that's the only place I know to get it.
I know I'm late - where's the booze?

im making my first-ever pumpkin pie next weekend, with tinned pumpkin i bought out of Lupe Pintos last year!

I was planning on just using shortcrust pastry.... wonder if it might be nicer with a base of crushed digestives?

I do mine w/the cheater shortcrust pastry from Pillsbury's.  ;D

But yeah, if you've got the time, mmm, crushed digestives.

I actually used the cheater pastry and then pressed crushed ginger biscuits and pecans into it. Really good!

I thought I'd bring this thread up to the top since Thanksgiving is coming up and because pumpkin season is just starting here in the UK.  I'll post that separately. 

So go forth and play with squash!

Oh and I was not dreaming... earlier in this thread if you look at the Jus-Roll Pastry photo there is the Pillsbury Dough Boy!!!  I have a feeling that they are one and the same compnay.  I think it's General Foods.

I usually make my own short crust pastry, but I have used Jus-Roll's puff pastry and it's delish!

Any old pumkin will do.  Heck you can even use butter nut squash or sweet potatoes or Prince edward squash (which looks like a pumpkin only it's blusih white outside.)

What I suggest is tasting.  Before adding the eggs so you don't die of salmonella.. though I still do sometimes with cookie dough and cake batter...  

Taste for sugar content and spice mix balance.

As a rule of thumb though the smaller the pumpkin  the sweeter it will be.


And yes the pie crusts are fairly accessible and if all else fails you can buy ready to roll or rolled pastry in the cold section of your store. Brands to look for are Tesco's own, Saxby and Pillsbury's Jus roll. Sainsbury's sell them too.

You want shortcrust pastry though they do do a sweeter pastry I have never tired that one.
