Really Easy Sticky Toffee Pudding

8 oz (225g) chopped dates
10 fl oz (276 ml) water
1 level teaspoon bicarbonate of soda
2 oz (50g) butter
6 oz (175g) caster sugar
2 eggs
6 oz (175g) self raising flour
1/2 teaspoon vanilla essence


bring the dates to boil in the water nd leave to cool slightly before adding soda. Cool completely. Cream together butter and sugar until soft. Add eggs one at a time. Fold in flour and vanilla essence.

Add water and dates. Pour into a 7" deep cake tin and bake at 180C for 30-40 minutes.

TOFFEE SAUCE

7 oz (200g) dark brown sugar
6 tablespoons cream
4 1/2 oz (125g) butter
1/2 teaspoon vanilla essence
4 oz (110g) pecan nuts

Bring all the ingredients to boil for 3 mins. Pour over pudding while still hot. Serve with double or clotted cream

This recipe is from the 5* Royal Scotsman Train...The recipe book was brought back to me.

Yummy!  It sounds healthy, low-cal and fat free!  I'll have to make some for the family ;-)

yeah my tummy was REALLY happy with me as well.......it is a really nice pud..........

the topping is GORGEOUS.....nice over ice cream too.......

You will love this Cait..it is soo very nice.......

the dates and water has to be just warm enuf to stick your finger in and be overly warm..and when you add the soda it kinda fizzes...

My FIL bday is tomorrow and he wanted sticky toffee pudding and I am glad someone had an easy recipe for the novice such as myself ;-)

I did this for our Easter pud and it went down a treat  :D No one was hungry when I served it but everyone cleaned their plates.
