Stewing Apples

OK, well my MIL, Rich and Caryn have all tried to explain it to me.  Just want to be sure.

I bought some cooking apples at the farmers market in town today.  Do I just peel them then cut them up put them in a pan full of water that I then pour out almost all of. (The water) Then add a bit of sugar/splenda and cook down? 

OK, what should the temp be at and how long does it take?  Do I need to keep stirring?

My MIL usually does a crumble, but left off the crumble bit because I need to cut down on carbs (She is sweet)  They were amazing like really chunky applesauce but better.

Whenever I've cooked apples I've just sliced them thin and they tend to bake well that way. I make this nice apple and pecan cobbler and all you do is put sugar and cinnamon on top of the apples, but the cobbler mixture on top of that and the apples seem to cook in their own juices.

You can also stew them in wine if you like.  though I think pears are better that way.

You really don't need all that water.  

Just cut them in half, put a bit of butter on them and baked them until soft.  Or Slice them or well dice them and add cinnamon, nutmeg and cloves to taste. throw them in a frying pan with a bit of butter or water if you want to cut down on fat and keep stirring until they cook down... Sweeten as needed.

Yeah, like vnicepeeps said... i would bake them, rather than stewing them.
I've even got a microwave apple-baker!

You can do it with any kind of apple really though Bramely is the apple par excellence!  Also a good choice is Ganny Smith.  Both apples hold their shape well when cooking.  Some will just turn to mush. 

Remember they are quite tart though so you will have to add sugar!

Apples are good just sauted in a pan.  Melt some butter and put the sliced peeled apples in the pan, and saute until soft.  Add some cinnamon and brown sugar until melted and serve over ice cream. or even warm scones with cream.

I did it!   ;D  I feel like a culinary genius!  Though I did stew them and it was easy peasy, though next time I need to cut the apples smaller, I got basically the consistency of applesauce with big chunks, still tastes heavenly!
