A few weeks ago I went to a veggie cafe in a local Art Centre.  I had Homity Pie with a thin whole wheat crust.  It was so so so so good.  So I am trying to find a recipe.  I was wondering if anyone had a good one they could share?  I found this one online.  I still need to find one for a good whole wheat shortcrust though. Anyone have one of those?

Homity pie 
 
 
• Serves 4

Ingedients
• Wholemeal shortcrust pastry
• 350g potatoes
• 450g onions - chopped
• 25g butter
• 1 tablespoon fresh parsley, chopped
• 100g Mature Cheddar cheese, grated
• 2 garlic cloves, crushed
• 1 tbsp milk
• Salt and Freshly Ground pepper to taste

Method
Roll out the pastry and line an 8’’ (20 cm) flan tin. In a saucepan of lightly salted water, boil the potatoes until tender.

Heat a frying pan with the oil and then fry the onions until they are soft but not coloured. Combine the potatoes and onions, add the butter, parsley, half of the cheese, garlic, milk and season well to taste. Cool, and then use to fill the pastry case. Sprinkle with the remaining cheese and bake in the oven at 220° C (425° F/Mark 7) for 25-30 minutes until brown.

This looks good and really easy......I prefer wholemeal myself, use it when making tortillas. If you don't try it, then I will!!! And if you do, we can compare notes!

Thanks!  I used this one....  They are quite similar.  I bet the lard makes it really good though.

Ingredients
125g/4oz plain flour
pinch of salt
55g/2oz butter, cubed
30-45ml/2-3 tbsp cold water



Method
1. Put the flour and salt in a large bowl and add the cubes of butter.
2. Use your fingertips to rub the butter into the flour until you have a mixture that resembles coarse breadcrumbs with no large lumps of butter remaining. Try to work quickly so that it does not become greasy.
3. Using a knife, stir in just enough of the cold water to bind the dough together.
4. Wrap the dough in clingfilm and chill for 10-15 minutes before using.
5. Alternatively using a food processor, put the flour, butter and salt in the food processor and pulse until the fat is rubbed into the flour.
6. With the motor running, gradually add the water through the funnel until the dough comes together. Only add enough water to bind it and then stop.
7. Wrap the dough in clingfilm as before and chill for 10-15 minutes before using.

Came out nice.  I just used 3 oz of wholemeal and 1 oz of white.  It makes enough for a thin crust for a 9 inch pie tin.

I made the pie as well.  I used a lot more potatoes and used one large onion and two leeks.  I added the garlic at this stage.  I cooked it all in olive oil and decreased the butter. 

You have to season to taste with this one.  It's like making really nice smash. 

It was nothing short of lovely and would make a great main meal with a salad.  Though I don't think it would work for those low carbers out there!  :)
