Devilled Eggs

I read somewhere that Devilled Eggs are all the rage just now so that's what we're having for a starter at our house on Xmas day.  Just wondered how other people make them? I came across this:http://www.cooks.com/rec/search/0,1-0,devilled_eggs,FF.html which has 1037 recipes!! So there must be a few variations - any ideas for a spcial Xmas variety??

they have awesome recipes.  I LOVE devilled eggs!  My mom actually had one of those old egg platters from like the 60's!  I loved the sprinkled paprika on them. She actually let me do that part!!!!!!!!  ;D

I saw one of those plates in a charity shop the other day, I ttink I'll go back and get it (fingers crossed it is still there!!).

I love them too! We always have them on holidays as an appetizer. I like the plain and simple ones though. Miracle Whip and mustard mixed with the egg yolks and paprika on top... scrumptious!  ;D No fancy ones for me!

Trying to remember how I used to do mine...it's been awhile...people said they liked them.  I probably went with a basic recipe (using either mayo or Miracle Whip) and I liked to add zing, like a wee bit of finely chopped sweet pickle and/or some (mild) mustard and/or a bit of hot (tabasco-style) sauce.  Maybe a wee bit of English mustard would kill the latter two bits with one stone?  (I've known of people including vinegar, olives, different herbs & spices, and the paprika thing definitely!  Also have seen a recipe that mixed tinned tuna with the yolks for the stuffing.  Guess it all depends on the taste you're going for -- but it's definitely a creative thing to experiment with!)

I haven't made them over here yet -- DH doesn't like eggs, neither does his mum, and so we don't tend to have eggs for family get-togethers, etc.

I had some great devilled eggs with chopped up green olives.

What a coincidence - I just had a devilled egg sammy for lunch!

My current favorite blend is mayonnaise (NOT Miracle Whip), dijon mustard, a bit of salt and lots of chipotle powder.  I think chipotle gives it a warmer, sweeter flavor than paprika, and plays off the mustard well.

I can't remember the last time I had a devilled egg....my late Grandma used to make ones using a basic recipe but man they were yummy.   I just may have to make some soon.

i love them, think I'll make some now!  I mix the yolks with mayo and mustard, s & p, sometimes a bit of garlic, and top it off with paprika and an olive slice - I also found one of those wonderful dishes in a thrift shop!  Just love it!
A positive attitude may not solve all your problems, but will annoy enough people to make it worth the effort.

I love my moms devilled eggs...little mayo, finely diced celery and dill pickles....and onions
little mustard and a dash of ranch dressing............mmmm

They all sound yummy! The chipotle idea sounds right up my street but might be too spicey for the two octogenarians we're entertaining, I'll save that for another time.  Keep the ides coming!
