The devilled eggs were a success.  In the end, I am not even sure how long they boiled for due to my toddler wanting my attention.

Dijon mustard, chopped green olives that were stuffed with roasted garlic and a bit of mayo, that was it.  I had 4 halves for dinner, just what I craved.

Oh wow, that sounds great!  I've only ever had the ones with mayo and maybe something else.  But didn't grow up with them so I have no idea what was in them.

My mom always said to boil them five minutes then turn the heat off, cover and let sit for another ten minutes to finish cooking. This way the yolks stay nice and yellow.

I was always told that you keep the yolks yellow by immediately cooling them off when you're done cooking. I always run mine under cool water for a minute to cool the pan off and then fill it with cold water and let it set for a few minutes.

I do that too -- but only because my mom always ran them under cold water. I don't think I actually ever questioned why I was doing it!  :-\\\\

I always used
 3 minutes=runny yolk and some inner runny white
 4 minutes=runny yolk and cooked white
 5 minutes=some outer cooked yolk and well cooked white.

I love soft-boiled eggs, but they're such a hassle to make. Scoop the egg onto a slice of torn-up bread with butter, salt and pepper. The runny yolk soaking into the bread. Aahhh....
