I often just add a bit of salsa to the mashed avocado, then a bit of lemon juice, and other spices if I think it needs it, but the salsa has the onion, and chopped tomato and the right spices as well, it turns out good for me.

Thansk for the tip.  I think it's an unripe one.  I bought 2, so maybe it'll be ripe by tomorrow!

If you want to hurry up the ripening process, put the avocados in a fruit bowl (or, better yet, in a paper bag) with other fruit -- bananas work well.

My guacamole recipe is the simplest of all, probably:   ripe avocado, mashed with garlic salt.   That's all.  I cant stand a bunch of 'stuff' in my guac!!

I like mine fairly simple: garlic, lime and coriander. I've never liked tomatoes getting in the way!

Just how I make it most of the time, yum!

NYNY, I know how you feel!  I had so much Mexican food when I was home it was crazy!  We went to a lot of the places that make the guacamole at your table.  NEVER buy the crap at the markets, they are disgusting, as you now know! ;D

I just tend to buy some ready made and add seasoning to it

garlic salt , cajun spice and a bit of lime

Last time I made guacamole I did it in the food processor and it came out pink! Tasted good though.
