I had to drag up this thread to brag about my homemade baked potato soup.  I love it!  So, we're having it for lunch today to kick off our Christmas meal extravaganza!  :)

I had to drag up this thread to brag about my homemade baked potato soup.  I love it!  So, we're having it for lunch today to kick off our Christmas meal extravaganza!  :)

Is it vegetarian? (Or can it become so?) Recipe? :) I love potato anything, and soup.

If you choose not to have the bacon, it could be vegetarian but not vegan.  Also, I peeled and boiled the potatos instead of baking them and then peeling and cutting them.  I found that easier for me, but either way works.  :)

Reviving the thread for January!

Since we had a company outing last night, there weren't any leftovers for my lunch today. So in desperation last night, I chucked the following into a tupperware: pumpkin I'd cubed and peeled a few nights ago, some broccoli, sliced mushrooms, and a stock cube. I grabbed a packet of soft udon noodles and it's heating now in a pot on the office stove.

And I just got a comment on how healthy it looks. :P

99-00 - studied at Uni of Sussex on exchange
Feb 02 - moved to London on BUNAC
Sep 02 - WP granted (IT skills shortage list)
Sep 04 - WP renewed
Sep 06 - WP renewed again (screwed by 4-5 year ILR change)
Sep 07 - ILR!
March 09 - Citizenship!
July 09 - bone marrow transplant :(
18 Sep 10 - wedding!
Mar 12 - half marathon in Paris! 1:47:12!
Oct 12 - Amsterdam FULL marathon! 3:48:23!

Reviving the thread for January!

Since we had a company outing last night, there weren't any leftovers for my lunch today. ooh, that sounds tasty! I'm on a quinoa kick, so I'm having tuna, sweetcorn, and quinoa. I'll admit that I mostly added the sweetcorn because I looked and tuna and quinoa and realized that it was quite a beige looking lunch!
We've restarted our veggie box after the holidays, so I'm looking forward to more colourful lunches next week!

Spinach salad with carrots, walnuts, sunflower seeds, and 2 hard boiled eggs sliced up on top of it and some honey mustard dressing.

I'm brown bagging it today, but as there were no leftovers from last night, today's lunch is a sandwich (bread machine oatmeal bread + Irish sweet tomato relish + cheddar + ham), carrot sticks, and some sourdough pretzels from our enormous Costco barrel.
