I've been bringing a quinoa salad to work: quinoa, mixed beans (pintos, black beans, kidney beans), corn, orange pepper, red onion, cilantro and honey-lime vinaigrette. It's awesome! I made it on Sunday and it seems to taste even better each day, I've not gotten sick of it yet.

Sainsburys giant couscous salad with feta & chickpeas, and spicy chili & olive oil dressing.  My mouth is on fire - it's really spicy!  But so good.  The giant couscous doesn't really seem like couscous though - it's more like pasta - like a spherical-shaped orzo.

The same salad I have every day.  1 carrot, 1 celery stalk, 1 tomato, 1/2 pepper, 1Tbsp crispy onions, 1Tbsp reduced fat salad cream - all mixed up in a bowl.  And today I'm having a bit of edam cheese on the side.  And then coffee.   :)

Had some Aldi potato and leek soup from the carton in the refrigerated section (like a mock Covent Garden soup) and it was shockingly delicious for 79p!!  :o

I was desperate packing my lunch this morning as we had no leftovers or bread for sandwiches, so I threw together my own DIY Potnoodle (inspired by this Hugh Fearney-Whittingstall recipe.

I chucked into a tupperware container:
1/2 teaspoon of veggie stock powder, and some thai spice mix
a good tablespoon of sweet chili sauce
chopped up raw broccoli
thinly sliced carrots
thinly sliced mushrooms
a brick of Ramen noodles, broken up so it'd fit in the container (the salt packet went in the bin, ewwww gross!)

Then just now at work, I chucked everything into a bowl, covered it in water from the kettle, and put a plate on top to cover it. In 1-2 minutes it was done and it was surprisingly delicious! Will definitely turn to this in a pinch again, yum.

Yesterday, I tried a Waldorf salad for the first time. It was okay, a bit different.

Today will probably be Covent Garden tomato and basil soup and maybe some cherry tomatoes and red pepper with a bit of salad cream for dip. (Yeah, I know most of you think salad cream is gross, but lately, it's been my food obsession.  [smiley=blush.gif])
