Casserole. ;)

(The story of the casserole... I used to eat frozen meals everyday at work, but I got very sick of it. I began to make casseroles on Sundays, packing them up for the week. That way I have a homemade, hot meal every day. It works great, but when I read about what you guys are having, it makes me giggled since my answer every day is "Casserole... again." So there you go.)

For the past month it's been King Ranch Chicken... corn tortillas, mushroom soup, rotel tomatoes and chilis, cheese and chicken doctored up with some spiciness. Mmm!

YUM! I could get down with that!  :D

Today it's a roast beef sandwich with pretzels and grapes. Kind of sick of sandwiches, but never seem to make anything for lunch the night before. A pasta salad might be nice for tomorrow, if I think to make it tonight!  [smiley=idea2.gif]

A pasta salad might be nice for tomorrow, if I think to make it tonight!  [smiley=idea2.gif]

I like to make super-quick pasta salads - so I thought I'd pass along this tip.

When you make pasta (shapes, rather than spaghetti or other string pastas) make a bit extra, and throw the un-sauced leftovers into a plastic baggie and into the freezer.  Then, the morning you want to make a pasta salad for lunch, rinse the pasta salad with cold water to defrost, then dump some canned corn, a can of tuna fish, and sliced red onions and tomatoes if you're ambitious.  A drizzle of olive oil, a drizzle of balsamic vinegar, some basil and oregano (or a splash of prepackaged Italian salad dressing) and voila!  A pasta salad that should take less than 10 minutes of prep time.

Obviously the more work you want to do, the different veg and whatnot you can toss in (black olives, peppers, etc).  But having that pre-cooked frozen pasta is a great timesaver.

Today's lunch from Tesco but assembled by moi: bagel with Borsin & ham, dried fruit & nut mix, yoghurt.  Fruit :P.

Thanks for the helpful tip! I will keep that in mind. Unfortunately DH really only likes spaghetti (he's weird like that) but I could just make some ahead of time and freeze into individual portions for myself and do all sorts of things with them (I'm craving a pasta salad with feta and olives). He doesn't seem to mind sandwiches every day.  :P

I love tiger bread! Never tried PB&J on it before, might have to give it a go sometime!

tuna salad sandwich on whole grain bread, pretzels, and an orange.
