Leftovers: scalloped potatoes, pasta salad, and a really nice avocado, black bean, corn, tomato and purple cabbage salad. That's my new fave!

a really nice avocado, black bean, corn, tomato and purple cabbage salad.

That was pretty much my order at the create-your-own salad bar at the deli when I worked in NYC. Mmmm.

I think it will be a tortilla with scrambled egg, salsa and cheese for me today.
